Grilled Asparagus with Honey Shallot Vinaigrette

Ingredients:

1 ½ lb. medium asparagus, trimmed and lower half of stalk peeled

For the vinaigrette:
2 Tblsp. red wine vinegar
1 Tblsp. honey
1 Tblsp. finely chopped shallots
1 tsp. Dijon mustard
1/3 C. extra virgin olive oil
Salt and pepper to taste

Chopped chives for garnish

Directions:

Pre-heat your grill on high and lay down a COOKINA BBQ sheet.

Mix the vinaigrette ingredients together in a small bowl and season with salt and pepper to taste. Set aside.

You may brush a little bit of olive oil on the asparagus before placing them on the COOKINA BBQ sheets. This will brown them evenly.

Cook asparagus until just tender, about 5 to 6 minutes, flipping them over at least once.

Place asparagus in long dish and drizzle with vinaigrette. Season with chopped chives and serve.

Yields 4 servings
