Grilled Caesar Salad Wedges

Ingredients:

For Caesar Salad Dressing

1 tsp. anchovy paste
Juice of 1 lemon
1 teaspoon Dijon-style mustard
2 cloves garlic, forced through a garlic press or finely chopped
Kosher salt or table salt and
Freshly ground black pepper, to taste
2 tablespoons extra virgin olive oil
1 tsp. heavy cream

2 large heads romaine lettuce, cut in half lengthwise
Grated Parmesan cheese

Non-stick spray

Directions:

Pre-heat your grill on high and place your COOKINA BBQ sheet directly on the grate.

In the meantime make the dressing by whisking al of the 8 ingredients in a small bowl. Set aside.

Spray each half of the romaine lettuces with non-stick spray and place flat-side-down on COOKINA BBQ sheet. Allow to grill for 2-3 minutes on high until grill marks appear. Remove from grill and place flat-side-up on a platter.

Drizzle with creamy salad dressing and parmesan cheese. Serve extra dressing on the side.

Yields 2-4 servings.
