Grilled Beets with Citrus, Feta and Herbs

Grilled Beets

Ingredients:

3 large beets, peeled and cut into 1/4-inch slices
2 Tblsp. extra virgin olive oil, divided
1 Tblsp. balsamic vinegar
1 tsp. Dijon mustard
1 tsp. honey
salt and pepper

For Salad:

1 orange, peeled and segmented
1 grapefruit, peeled and segmented
¼ C. fresh mint, cut in chifonade
¼ C. chives, finely chopped
½ C. feta cheese, crumbled

Directions:

Pre-heat your grill with a COOKINA Barbecue sheet on top on high.

In the meantime, make dressing by whisking olive oil with vinegar, mustard honey and season with salt and pepper.

Once the beets have cooled down assemble by placing beets, orange segments and grapefruit segments on a large serving dish. Drizzle dressing and add crumbled feta cheese and chives.

Serve immediately.

Serves 4-6.
